There are 6 types of tea, defined by the process that makes them.  White tea is the least processed among the true tea types and considered by many as the "purest type of tea"

The least processed among all true tea types

PROCESS:  Withering, drying

UNDERTONES: Light, floral, slightly sweet

POPULAR VARIETY:  "Silver Needles"

HOW TO BREW:  45 seconds- 5 minutes, 85 -95 deg Cel

GREEN TEA

The most studied among all true tea types.

PROCESS:  Withering, fixing, rolling, drying

UNDERTONES: Vegetal, mellow

POPULAR VARIETIES:  Sencha, Matcha, Mao Feng, Dragonwell, Gunpowder, Long Jin

How To Brew:  86-95 deg Cel; 1-2 minutes

Rare and precious yellow tea

PROCESS:  Withering, fixing, wrapping, drying

UNDERTONES: Vegetal, mellow

POPULAR VARIETY:  Huoshan Huang Ya

How To Brew:  86-95 deg Cel; 1-2 minutes

RED TEA

(BLACK TEA)

The most popular tea in the world.

PROCESS:  Withering, rolling, oxidation, drying

UNDERTONES: Subtly sweet, fruit-y, peach-y

SPECIALITY VARIETY:  Dian Hong, Jin Si, Yin Zhen

How To Brew: 95 deg Cel; 1-2 minutes
